High Quality Mexican Gourmet Preserves

Baja Explosion Medallion of Filet Mignon Wrapped in Turkey Bacon

Serves 2;  preparation time 30 minutes


  • Salt and pepper, to taste
  • Two medallions of beef steak - preferably filet mignon
  • 4 slices of turkey bacon
  • Toothpicks are required to keep pinwheel together
  • 1 tablespoon oil
  • 2 tablespoons butter
  • 16 green onions, stemmed
  • 1 red bell pepper, cut into strips


¨ Hot ¨ Mango Salsa:

  • 4 ounces of CSB Gourmet Mango Habanero Jelly
  • Mango finely diced
  • Butter



Mashed potato or fried cubed potatoes with butter and rosemary

Vegetables to taste


  • Salt and pepper medallions, wrapped with turkey bacon and secured with toothpicks. Heat oil in a pan and fry the medallions on both sides at the end of your choice: Reserve.


  • In a skillet heat the butter and fry the onions and peppers, season and cook until cooked through.


  • Saute in butter mango cubes, and add 4 ounces of CSB Gourmet Mango Habanero Jelly


  • To serve, place the mashed potatoes and the onions and slice the red pepper, place the medallion of beef, bathe with Mango. Habanero salsa. Place the steamed vegetable garnish.
