Taste of The Baja

High Quality Mexican Gourmet Preserves


Serve 6 – 8. Preparation time 30 minutes.



  • 600 gr- 3 cups of Graham wafer crumbs.
  • 60 gr- 4 tbs. Sugar.
  • 170 gr- 12 tbs of melted butter.



  • 460 GR- 16 OZ. .  Philidelphia creama cheese at room temperature.
  • 180 gr- ¾ cups of sugar divided in two -  ½ cup in one part and ¼ in the second part.
  • 2 tbps of vanilla extract or lemon juice
  • 480  ml – 2  cups of whipping or heavy cream.


9 inch pie plate


  • In a bowl or food processor crumb the Graham wafers. Mix in liquid butter and process until mixture is the size of peas. Press the crust mixture into a 9 inch pie plate pressing up the sides until all of the bottom and sides of the pie plate are covered. Put in freezer for 30 min.


  • Put the Philadelphia cream cheese in a bowel. Beat until very creamy.  Put in vanilla or lemon juice along with ½ cup of sugar.


  • Pour the filling mixture over very cold and prepared pie crust.


  • Refrigerate for 1.5 hours until well chilled.


  • Pour jam over the entire Surface of the pie. Arrange finely sliced fresh strawberries over top and drizzle with melted chocolate. Refrigerate 1 hr.
