High Quality Mexican Gourmet Preserves

Spinach and Ham Frittata

Serves 2; preparation time  15 minutes

INGREDIENTS:

  • 4 cups of cleaned raw spinach
  • 1 cup of ham cut in cubes from ½ to ¾ inch thick slices
  • ½ finely diced red
  • ½ finely diced red onion
  • 3 eggs or 4 egg whites well beaten
  • 3 tbs. Crumbled goat or feta cheese
  • 4 tbs. CSB GOURMET GUAVA JALAPEÑO JELLY
  • 2 tbs. Extra virgin olive oil

PROCESS:

  • Cook jam, onions and red pepper in a pan with olive oil until ha mis lightly golden and vegetables are limp.

 

  • Add raw spinach and cook until just wilted.

 

  • Add beaten eggs or egg whites and roll in pan to ensure the bottom is covvered with eggs. Agregar los huevos batidos o claras de huevo

 

  • Top with crumpled goat or feta cheese.  Cover and let cook until top of frittata is set with no liquid eggs visible.

 

  • Top with CSB GOURMET GUAVA JALAPEÑO JELLY.

 

  • Serve with toast points and additional jelly.
