Zucchini Rolls a La Diabla

Serve 4;  preparation time 40 minutes

INGREDIENTS:

  • 8 medium size zucchini
  • 1 block of Philadelphia cream cheese
  • 1 liter of water
  • 1 ½ tsp. of salt
  • 32 slices of turkey breast thinly sliced
  • 32 slices of red pepper (optional)
  • ¼ cup CSB GOURMET PINEAPPLE HABANERO JELLY
  • 1 tbs. of olive oil .

PROCESS:

  • Prepare zucchini ¨rings¨ by cutting stem and bottom of each zucchini, and cutting each one into 4 equal partss.  With a sharp knife, cut out the centre of each to create zucchini rings.  Cook the zucchini rings in boiling water for about 5 minutes (cooked but still firm). Pour into ice water to stop the cooking process.

 

  • In a frying pan in batches of three or four, cook the sliced turkey until lightly golden careful not to burn the edges.  Repeat the process until all turkey slices are cooked. Put in refrigerator to cool thoroughly.

 

  • Combine the cream cheese with CSB PINEAPPLE HABANERO JELLY mixing well.  Spread the cream cheese mixture on each slice of turkey.  Add a slice of red pepper and roll up.

 

  • Insert turkey rolls into zucchini rings.  If desired drizzle more CSB GOURMET PINEAPPLE HABANERO JELLY rings.

 

  • Arrange on a platter and serve.  Enjoy!!
