High Quality Mexican Gourmet Preserves

Vegetable and Chicken Frittata

4 people; 30 min. preparation

INGREDIENTS:

  • 4 cups of raw spinach
  • 2 chicken breasts cut in strips
  • 2 large potatoes cubed and  precooked in salted wáter
  • 1 large red pepper diced
  • ½ large onion finely diced
  • 3 tablespoon of goat or feta cheese crumbled
  • 4 tbs. CSB GOURMET MANGO HABANERO JELLY
  • Olive oil to cover the bottom of a large frying pan

PROCESS:

  • Cook chicken strips in frying pan with diced onions and and red peppers in olive oil until chicken is lightly golden

 

  • Add cooked potato cubes and spinach. Cover and cook until potatoes are heated and spinach is wilted

 

  • Sprinkle with crumbled goat or feta cheese

 

  • Drizzle MANGO HABANERO JELLY

 

  • Enjoy
